Gov’t to impose stricter environmental standards on restaurants and cafés
Starting next year, restaurants and cafés in Uzbekistan will be required to comply with new standards aimed at reducing their negative impact on air quality.
The government resolution adopted on 16 September also introduces measures to reduce food waste in food service establishments and ensure its efficient use. These initiatives will be implemented under the special state program on “rational consumption” – Save Food.
Urban planning rules and regulations will be updated to include requirements on ventilation and air filtration in food service facilities. Beginning 1 July 2026, all establishments will be required to install grease traps and clean them monthly. Having such equipment will become a mandatory condition for connecting to the sewerage system operated by Uzsuvtaminot. Restaurants and cafés will also be obliged to install special devices that capture pollutants and odors produced during open-flame cooking – whether using gas, coal, or wood.
In addition, the government plans to expand the use of fertilizers derived from composted food waste, prepare composting guidelines based on the experience of developed countries, and organize training seminars for farmers.
Special attention will be given to fats and oils waste: its discharge into sewer systems will be restricted. It is recommended that such waste be processed into household soap or animal feed, or otherwise disposed of depending on its technical properties.
